No-Bake Energy Balls

This recipe was inspired by my mother who made the most delicious Peanut Butter Energy Balls last week!

I was craving something sweet today and pulled out all the ingredients I could to use in this recipe! That’s the fun part about these energy bites, you can put whatever you want in them and as long as you have a nut butter (or coconut oil), they will form into the most delicious bites!

I just knew that I needed peanut butter and chocolate in mine… there’s no harm in that :)

What you will need:

  • 1 cup of oats

  • ⅔ cup creamy natural peanut butter

  • 2 tbsp maple syrup

  • ¼ cup flax seed

  • 2 tbsp chia seeds

  • ¼ cup dark chocolate chips (optional ;))

  • 2 tbsp shredded coconut (optional)

  • Other great things to add: seeds, protein powder, dates or any dried fruit, nuts, coconut oil instead of a nut butter, cinnamon, turmeric, vanilla  … the possibilities are endless!)


Instructions:

  1. Place all of the ingredients in a bowl and mix.

  2. Form balls and place on a cookie sheet lined with parchment paper.

  3. Place in freezer until hard so they retain their shape.

  4. I keep these energy balls in a container in the freezer and snack on them throughout the week!

*** If you are not lazy like me, place the ingredients in a food processor to create smooth and compact balls. This also helps if you have picky eaters at home who dislike textures!
