Soft Chocolate Chips Cookies

Serves: 24 cookies or 15 HUGE cookies which is how we make them in the Wandry household!

Ingredients

  • 16 tablespoons (2 sticks) of butter: I use unsalted but salted yields the same results.

  • 1 cup white sugar

  • ½ cup packed light brown sugar

  • 2 teaspoons vanilla

  • 2 eggs

  • 3 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 ½ cups chocolate chips/chunks: We LOVE chocolate so our cookies always have extra chocolate! Add less if you don’t like as many chocolate chips.

Instructions

  1. Preheat the oven to 350 degrees. Microwave butter for 40 seconds to just barely melt it.

  2. Using a stand mixer or electric beater, beat the butter with the sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated - 10-15 seconds or so (beating the egg for too long will produce stiff cookies - learned this the hard way!).

  3. Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball and should not be too sticky. If dough is sticking to your hands, add a little more flour. Add the chocolate chips and incorporate with your hands (or a rubber spatula).

  4. Roll the dough into 24 small balls (or 15 for MASSIVE cookies) and place on a cookie sheet. Bake for 9-11 minutes until the cookies look puffy and dry and just barely golden. DO NOT OVERBAKE. I like to check on my cookies right at the 9 minute mark and usually have to leave them in for another minute since they are so big.

  5. Let them cool on the pan for a couple of minutes. Tyler will usually eat most of them before the batch has cooled! These stay soft for a few days and are just as delicious as they were when they were first pulled out of the oven!
